Some technicalities.

Let’s get more technical: Milk & Cheese machines are mini dairies that run solely on electricity and have no need for additional facilities, not even water. This is precisely why they are on wheels, because they are born to be a vital ally in small spaces where the need to move equipment is often unavoidable.

Milk & Cheese heaters heat through high-performance, environmentally sustainable heating elements so that there is no energy loss, and they can heat the product up to 100 °C (212 °F). They are therefore also pasteurizers.

The real strength of the Milk & Cheese is the cooling part: thanks to a special compressor they cool down to 2 °C quickly, precisely, and ecologically, which is precisely why they are a real trump card for yogurt production.

In the production of cheese and dairy products it is not only necessary to heat and cool, but also to maintain a constant temperature, and in this Milk & Cheese machines are by far the best on the market. Our experience has enabled us to develop a special algorithm that combined with advanced components and high quality construction allows Milk & Cheese to have extremely high precision in maintaining temperature, with minimum fluctuations of less than 0.1 °C.

Simple cheese machinery.

Among the milk processing machinery produced by FDstore, the Milk & Cheese line is the most advanced and evolved, the top of the line.
However, people does not always have the opportunity or the need for the best, which is why our range of machinery also includes a series of mini dairies of various capacities and with different energy feeds.

We have stainless steel water-cooled electric mini dairies with small capacity and basic technology, without self-cooling but water-cooled.
These are simple and functional machines with reduced automation, suitable for cheese processing or small fermentation. We have several models with different capacities and features, from 25 liters up to 600 liters.

We also have stainless steel kettles with gas heating and water cooling, of various capacities (from 50 to 300 liters), mostly suitable for the production of fresh or ripening cheeses.

These solutions are less multipurpose than the main Milk & Cheese machines-Milk & Cheese machines are more flexible, modular, and high-performance for production and workspace management. Water-cooled machines require fixed installations, while Milk & Cheese machines can also be moved several times a day between different workplaces offering greater production ergonomics.

The range of batch freezers is very wide, starting with a small air-cooled benchtop batch freezer with an hourly output of 10 Kg/h, thus suitable for small productions, moving on to the best-selling 20 Kg/h professional vertical air freezer, the best option for those who decide to start with small volumes but already want to be ready for larger volumes, and ending in the series of horizontal air and water freezers with hourly outputs of 35 – 60 – 90 Kg/h.

In the variety of dairy by-products that can be produced at the dairy and on the farm, skim milk and butter should not be forgotten.

Milk cream can be done by rising, but it is a very slow process in which patience and the availability of ample protected space are needed.
To speed up this process we have milk cream separator of various sizes and capacities, which by centrifugation extract the fat part of the milk, separating the milk that becomes skim milk, and the cream.
This process can be functional for the production of skim milk products, or for the production of cream.

In addition to being sold as is, cream can also be processed: using an instrument such as a butter churn, cream is churned to produce butter and buttermilk. To support you in this process we have butter churns of various sizes and capacities for you.

In medium-sized dairy production businesses, the first step is to move from manual dosing to a semi-automatic countertop dosing machine.
We have the perfect product for this: a line of semi-automatic compressed-air countertop dosing machines that can dose a minimum of 5 ml up to a maximum of 1500 ml. They are suitable both for packaging liquid food products such as pasteurized milk, as well as for packaging semi-dense products such as yogurt and its variants, dense products such as fruit purees, and also for packaging hot products such as milk-based desserts. Therefore, with one dispenser you can package all your dairy products easily, cleanly and quickly.

You’ve created and packaged your dairy products, but that’s not the end of the story: now you have to store and maintain them at a controlled temperature (and humidity).

For your dairy or artisanal dairy laboratory, we have a wide range of refrigerated cabinets and coolers of various sizes, liters and power ratings.
These are fairly simple tools, but they need to be reliable and accurate so that your products are preserved at their best.
First of all, depending on the product to be stored you will need to know at what temperature you need to store it: you can choose between positive refrigerated cabinets, that is, with a temperature range of 2 to 8 °C, or negative refrigerators, which can store down to -18 °C.
Another key feature is the type of cooling, which can be static or ventilated.
Usually ventilated cooling is used in all situations where the products to be stored are already packaged, such as yogurt, spreadable and processed cheeses, and desserts. Static cooling, on the other hand, is mandatory when storing products that may be affected by air movement. Usually cheeses are ripened with static cooling.
