The Milk & Cheese heats up to 100 °C thanks to internal electric resistors, and cools down to 2 °C thanks to an autonomous refrigeration system inside the machine: to cool you will not need any chiller, external system or anything else, the machine does everything autonomously.

They are equipped with an advanced touch screen computer that allows you to have your recipes/programs saved and always available to be started without having to reprogram them every time; furthermore, thanks to the advanced technology inside and the multiple probes, the touch screen controller allows the machine to have maniacal precision in controlling the milk temperature . The controller will also allow you to export the processing data to your system for greater control. Thanks to these technologies, the machine is compatible with 4.0 .

The electricity consumption of Milk & Cheese machines is reduced to the bone and thanks to this they are ideal machines to address an energy saving issue in the case of replacing machines that use other energy sources such as gas, steam or other. What cheeses can I make with Milk & Cheese?

With Milk & Cheese machines you can produce any type of cheese, milk, yogurt or dairy product .

Thanks to their proverbial precision in temperature management and the integrated refrigeration system, Milk & Cheese machines are perfect for the production of yogurt , fermented milk and pasteurized drinking milk . The yogurt produced by our machines is dense and compact, and does not require additives or evaporators that drastically reduce the yield.
However, if you prefer to make strained yogurt, we also have the optional evaporator that extracts steam during processing, lowering the liquid part and making the yogurt even more compact, but be careful: by doing so you will lower the yield of your product!

You will also be able to produce any type of cheese , starting from the simple primo sale and caciotta , stracchino , crescenza , spreadable cheeses such as robiola or philadelphia, processed cheeses ; various cheeses with a bloomy rind such as tomino , Brie and Camembert, or washed rind cheeses such as Taleggio , or blue cheeses ; semi-cooked or cooked cheeses , medium-aged cheeses such as pecorino up to long-aged cheeses such as grana . You will also be able to produce the whole world of stretched curd cheeses such as mozzarella , caciocavallo , scamorza , provolone .
Finally, the Milk & Cheese machines will give you the possibility to prepare the base for ice cream or to produce milk-based desserts .

Touch Screen Controller with Remote Control 4.0 for the Milk & Cheese Machine Line

The latest extraordinary innovation in the world of Milk & Cheese is the touch screen controller, which integrates all the advanced technology of our machines.

The touch screen controller is a PLC computer with a very functional and convenient user interface. It includes all the functions necessary for using the machine, which can operate either in manual mode (i.e. you manually give the individual step-by-step commands) or in automatic mode. The automatic mode provides for the use of 20 recipes, each with 10 operation steps. Each recipe is freely programmable and editable. For each step of each recipe, if desired, you can set the parameters that regulate the power output of the machine: this means that for each step you can decide whether the machine uses maximum power or perhaps you need a more delicate heat treatment and therefore prefer to set a more delicate output.
The touch screen controller also allows the export of processing data via USB or via local network and also allows complete remote control of the machines (via username and password): this means that you can connect remotely to the Milk & Cheese even from a PC or mobile phone and control and command it remotely, even from another city. These features make the Milk&Cheese compatible with 4.0.

What accessories do I need?

The Milk & Cheese machines are really complete and have few optional features to complete them.

If you intend to produce yogurt or desserts or processed cheeses, the SPECIAL YOGURT SHAKER WITH SCRAPER accessory is of fundamental importance. Thanks to its design, it allows you to unload the yogurt delicately and without compromising the structure and density obtained. Thanks to the Teflon scraper, during the melting phase of the cheese, it allows the melted cheese to not stick to the walls of the vat. It is available for all models.

If you want to make cheese instead the ideal optional is LIRA TAGLIACAGLIATA or a flag blade with harmonic steel wires that allow the machine to cut the curd automatically or under your supervision. Alternatively you can cut the curd manually with curd cutter pins or plastic liras; we also have these.
Also for cheese production we also have a CURD UNLOADING TROLLEY on wheels, with drain tap, at the perfect height for use with Milk&Cheese. After breaking the curd you can unload it from the machine drain into the trolley, and distribute it in the appropriately prepared baskets together with a plastic curd distributor.

If among the products you want to make there is pasteurized milk or drinkable yogurt, you will definitely need a suitable REDUCED DRAIN TAP . We have two types, a simpler one that is a reduction of the drain diameter to 25 mm; the other more advanced is a drain system with an additional tap for manual bottling: its shape allows to avoid the formation of foam during the bottling phase.

We also have a new option to make the production of yogurt and cheese even more automatic: the AUTOMATIC FERMENT DOSE that allows the machine to be programmed and dose the ferments or rennet automatically. In this way there will no longer be any need for your intervention but the insertion of the ferments will take place in a completely automated way.

The last option concerns the production of strained yogurt or Greek yogurt: why produce yogurt and then leave it to strain for hours with the ever-present risk of microbiological pollution? To avoid all this we have an AUTOMATIC CONCENTRATOR EVAPORATOR which, automatically controlled by the machine, allows steam to be drawn from inside the vat during production to concentrate the finished product. However, we are honest, we do not really believe in this approach because we believe it is crazy to deprive ourselves of a large percentage of processing yield
